
My latest and greatest obsession that is ridiculously easy to make!
Ingredients
1 TB Olive Oil
1 lb Ground Turkey
1 Bag Mixed Broccoli and Cauliflower
1 cup Dry Brown Rice
Pinch of Salt
1 tsp Garlic Powder
3/4 tsp Ginger
Coconut Aminos (I love Trader Joe's)
Preparation
Heat oil in a pan over medium heat.
Add ground turkey and cook until browned adding salt, garlic and ginger the last couple minutes of cooking.
Fill a small pot with a couple inches of water and add bag of broccoli and cauliflower mix, steam for approximately 4 minutes. You want the veggies to be soft but still slightly hard so they don't become soggy in the fridge.
Fill a pot with 2 1/4 cups of water and bring to a boil. Add 1 cup of brown rice, bring back to a boil. Reduce heat to simmer, cover and cook for 40 minutes.
Serve 1 cup of brown rice with 1 cup of ground turkey, divide veggies into three servings and top with coconut aminos. Makes 3 quick grab and go meals!
